We present a simplified version of a beverage from our latest cocktail list. Designed as a large-volume pre-mixed which is bursting full of tastes of the holiday season, which makes it ideal for your holiday party. Reserve the remaining syrup to use in breakfast cocktails, sweets, or to make additional servings of bikinis.
Bikini
Makes enough for 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Place the listed ingredients into a saucepan, heat until it reaches a light boil, agitating to dissolve. Next, remove from the stove and leave to cool entirely. Transfer into an sealable bottle, close it and store in the fridge, it can be stored for up to a month.
To make Premix: Combine the specified liquid ingredients in a big jug, let it rest for 60 minutes, then filter it , ideally through a fine cloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml from the premix to a mixing glass packed with ice, gently stirring lightly for a minute to chill. Pour into a cold coupe glass or equivalent, decorate with some cranberries adding the final touch using a quick spritz with the mandarin essence over the drink.
